Coconut Macaroons

2-2/3 cups flaked coconut
2/3 cup granulated sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 egg whites
1 teaspoon almond extract

Preheat oven to 325 degrees F. Lightly grease and flour a large cookie sheet or line with parchment paper; set aside. In a medium mixing bowl combine coconut, sugar, flour, and salt. Stir in egg whites and almond extract. Drop by rounded teaspoons 2 inches apart onto prepared cookie sheet. Bake for 20 to 25 minutes or until edges are golden brown. Transfer cookies to a wire rack and let cool.

Chocolate Chip Toffee Bars

2 1/2 cups all-purpose flour
2/3 cup packed light brown sugar
3/4 cup (1 1/2 sticks) butter or
margarine
1 egg, slightly beaten
2 cups (12-ounce) package
semi-sweet choc chips, - divided
1 cup coarsely chopped nuts
1 (14-ounce)can EAGLE BRAND
Sweetened Condensed Milk
(NOT evaporated milk)
1 3/4 cups (10-ounce) package
English Toffee Bits, divided

Preheat oven to 350. In large bowl, stir together flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg; mix well. Stir 1 1/2 cups chocolate chips and nuts. Reserve 1 1/2 cups mixture. Press remaining crumb mixture onto bottom of 13x9-inch greased baking pan. Bake for 10 minutes. Pour EAGLE BRAND evenly over crust; top with 1 1/2 cups toffee bits. Sprinkle reserved crumb mixture and remaining 1/2 cup chocolate chips over top. Bake 25 to 30 minutes or until golden brown. Sprinkle with remaining 1/4 cup toffee bits. Cool completely. Cut into bars. Makes 24 – 36 bars

CHOCOLATE CRACKLETOPS

2 cups all purpose flour
2 tsp baking powder
2 cups granulated sugar
1/2 cup (1 stick) butter or
margarine
4 squares (1 oz each) unsweetened
baking chocolate, chopped
4 large eggs, lightly beaten
2 tsp vanilla extract
1 3/4 cups M&Ms mini baking bits
Additional granulated sugar

Combine flour and baking powder; set aside. In 2 qt saucepan over medium heat combine 2 cups sugar, butter and chocolate, stirring until butter and chocolate are melted; remove from heat. Gradually stir in eggs and vanilla. Stir in flour mixture until well blended. Chill mixture for one hour. Stir in M&Ms; chill mixture an additional one hour.

Preheat oven to 350. Line cookie sheets with foil. With sugar-dusted hands, roll dough into 1-inch balls; roll balls in sugar. Place about 2 inches apart onto prepared cookie sheets. Bake 10-12 minutes. Do not overbake. Cool completely on wire racks. Store in tightly covered container.

Makes about 5 dozen

Gingerbread Boys

1 cup and 3 tablespoons butter, softened
1-3/4 cups and 1 tablespoon white sugar
1-1/4 egg
1/4 molasses
3-2/3 cups all-purpose flour
2-1/2 teaspoons baking soda
2-1/2 teaspoons ground cinnamon
1-1/4 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt

Mix the butter and the sugar together. Beat in the egg and mix well. Add the molasses, beat well. Add the flour, baking soda, all spices, mixing until well combined. Chill dough for several hours Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment or grease pan. On a lightly floured surface, roll dough out to 1/4 inch thick. Cut out using gingerbread boys cutters. Place cookies closely onto prepared cookie sheets. Bake for 10 to 12 minutes. Transfer to cooling rack.

Spritz Cookies

1 cup butter, softened
1/2 cup sugar
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 egg
1/4 teaspoon almond extract or vanilla
Food color, if desired

Currants, raisins, candies, colored sugar, finely chopped nuts, candied fruit or fruit peel, if desired

Heat oven to 400ºF. Beat butter and sugar in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, salt, egg, almond extract and a few drops of food color.

Place dough in cookie press. Form desired shapes on ungreased cookie sheet. Decorate with currants.

Bake 5 to 8 minutes or until set but not brown. Immediately remove from cookie sheet to wire rack. To decorate cookies after baking, use a drop of corn syrup to attach decorations to cookies.
