Delicate, eggnog-flavored cookies, dipped on each end in delicious creamy vanilla frosting, and then rolled in chopped pecans.

Eggnog Logs Cookies

Dough
1 cup (2 sticks) butter, softened
¾ cup sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon rum flavoring
3 cups all-purpose flour
1 teaspoon grated nutmeg

Vanilla Frosting
¼ cup (½ stick) butter, softened
2 cups confectioners’ sugar
2 tablespoons milk
1 teaspoon vanilla extract
¾ cup chopped pecans for dipping

Preheat the oven to 350°F/180°C. In a medium bowl, using an electric mixer, cream together the butter and sugar. Add the egg, vanilla, and rum flavoring and beat until light and fluffy.

Combine the flour and nutmeg, and gradually add to the creamed mixture until incorporated.

Divide the dough into 10 portions, and roll each portion into a rope 15 inches long. Cut each rope into 5 logs. Place the logs on ungreased baking sheets.

Bake the logs for 10 to 12 minutes. Transfer to wire racks to cool. Make the frosting: Beat the butter, confectioners’ sugar, milk, and vanilla together until smooth. Dip the ends of the cooled logs into the frosting and roll in the chopped nuts.   Makes 6 dozen logs.
