Dulce De Leche - Can often be found in your local grocery in either the Latin section or baking supplies, near the evaporated and condensed milk. I recommend Nestles, in flavor, above all others.

Copha or Kremelta, solid vegetable shortening made of coconut oil -

Lard - Good quality lard to bake with is harder to find than cheaper, hydrogenated lard which is readily available. Go to a health minded grocery store and read the labels.
